First of all let's start by explaining what is meant by dairies. Perhaps not everyone knows that this is the name given to both the dairy factory and the company producing dairy products. Casein, a type of protein found in all mammals, produces the coagulation reaction that causes this transformation and forms into stringy or smooth varieties depending on how much time remains after cooling with other factors involved such as acidity levels

Ricotta, on the other hand, is made from the excess production of what is used to prepare the cheese: the curd.
While the cream is made up of the fatty part of the milk processed through a centrifugation process and in turn, the butter comes from further processing of the cream.
