1)THE CUSTOMER HAS ALWAYS REASON

Management

It may seem trivial to you, but this formula is everything in a sector with a high human factor such as catering.
This is why if you make a mistake with a customer's order, you have to act as sorry as if they had killed his cat.
According to Freud, people are united by a single great desire: to feel important.


Regardless of how compliant your customer appears to be, if you don't treat him with empathy and sensitivity he will harbor resentment within himself, a very bad enemy for your relationships, starting from the professional ones.

2)THE STAFF

You are exploiting your employees! And they you!
But seriously, how many of them have the ultimate ambition of staying next to you for the rest of your career? Unless your place is a prestigious chain of restaurants or luxury hotels, as soon as they find something better, the best ones abandon you.


Think about it: at least half of your waiters accept the job because they've been trying to graduate in anthropological and snack sciences for 7 years and a few months ago they started feeling guilty towards their parents.
Imagine that one of them fails yet another exam today and has a shift tonight.
You find the customer difficult and at the first strange request your employee, that is, the person who represents your restaurant, responds with a rude and pedantic tone.

The feeling of resentment I told you about in point 1 has just begun, so from now on your customer will unconsciously look for other reasons to be legitimately dissatisfied. In the end he won't come back and won't recommend it.
This is an example to make you understand what influence staff mistakes have.

3)MANAGEMENT AND ORGANIZATION OF WORK

Let's analyze this point starting from the customer, since we have seen how important his role is for the success of your business.

He/She enters and can find himself in two different situations:
A) he/she is immediately greeted by a smiling and motivated waiter
B) he/she doesn't really understand who he/she has to ask what and waits for minutes standing and embarrassed

Finally sits down:
A) they find a ready table and give him/her the menu
B) the table still has crumbs from old customers



The moment of the order arrives:
A) if something is missing, the waiter suggests alternatives; orders arrive directly in the kitchen, thanks to the right software
B) the waiter is not sure what is missing and what is not; comes back after taking the order to warn the customer that his favorite dish is not available; in all this they haven't started preparing in the kitchen yet

The dishes arrive:
A) on time and together
B) late and wrong

Customers leave:
A) satisfied and with the desire to share with the world and on social media how much your food is worth place
B) with an anger to vent on all their friends
