Cake:
– 2 cups flour
– 2 teaspoons baking powder
– 1 teaspoon bicarbonate of soda
– one cinnamon
– 1 teaspoon ginger
– 1/2 teaspoon nutmeg
– Salt
– 1/2 cup sugar
– 2 eggs
– 1/2 cup honey
– 1 stick unsalted butter, at room temperature
– 1 teaspoon vanilla
– Zest of 1 orange
Icing:
– 1/2 cup powdered sugar
– 1 tablespoon honey
– one cup milk or cream
– 1 tablespoon unsalted butter, melted
– 1/2 teaspoon cinnamon
– 1/4 teaspoon ginger
– Pinch of salt
PREPARATION
Preheat oven to 350 degrees. Butter a baking pan and line with a strip of baking paper for easy removal.
In a large bowl combine the eggs, sugar and honey. Using a mixer or your hand, beat together until the sugar dissolves.
Add the butter, vanilla and orange zest and beat until incorporated.
In a separate bowl, sift together the flour, cinnamon, ginger, nutmeg, baking powder, baking soda and salt.
Add the dry ingredients to the wet and mix until combined.
Pour the mixture into the prepared pan and bake for about 40 minutes.
Make the icing by whisking together the sugar powder, honey, milk, melted butter, cinnamon, giner and salt. Sprinkle over the hot cake.
