Let's start with the first course: rice with melon.
To prepare it you will need:
250 grams of basmati rice;
200 g spicy provolone;
150 g bresaola or raw ham;
2 melons;
mint, oil, salt and pepper to your liking.
We start by boiling the rice, which is then drained and set aside to cool. Cut the two melons in half, clean them of the seeds and empty the two halves with a corer - trying not to damage the peel - to extract the pulp.
Cut the bresaola (or the raw, less light but tastier alternative) into strips and the provolone and the melon pulp into cubes.
Add everything to the cooled rice, together with the mint and a sprinkling of black pepper. A drizzle of oil and ready on the table.
The original idea for your dish? Serve rice in melon peel as if it were a bowl!
Second course: chicken strips with basil and melon

As a second course, we propose chicken strips with basil and lemon. You need:
500 grams chicken breast;
half a melon;
juice of one lemon;
a bunch of basil;
salt, pepper and oil to taste.
Cut the chicken breast into thin slices and marinate them for thirty minutes with the lemon juice, salt, pepper and 6-7 chopped basil leaves.In the meantime, clean the melon from the seeds and zest and cut it into cubes.
Heat a well-oiled pan and cook the chicken with the marinade on a high heat for five minutes. Once the process is complete, cut the chicken into "shreds" by blending it with a little basil leaves and finally add it to the melon.
Dessert: melon and amaretto semifreddo

400 grams of melon pulp;
150 grams icing sugar;
12 grams gelatine sheets;
3 egg yolks;
6 tablespoons amaretto liqueur;
4.5 dl cream for sweets.
Soak the gelatin in cold water for five minutes; in the meantime, blend the melon until you obtain a puree.
In a saucepan, heat the amaretto liqueur, adding the well-drained and squeezed gelatine. With the heat off, stir until the gelatine has dissolved.
Using an electric whisk, first whip the cream and then the egg yolks, adding the sugar to them, until they become frothy. Add, continuing to mix, the blended melon, the gelatine and then the cream. Distribute the cream into molds and place it in the freezer to harden for at least three hours; before serving, leave them in the fridge for an hour.
