Mole is a Mexican sauce prepared with different chili peppers and many other ingredients and spices.

Indeed, there are different types of mole, and today, its two main centers are the states of Oaxaca and Puebla.

It is a sauce with numerous variations that differ from each other based on the area where you are located. It is used to accompany meat and has the appearance and flavor of chocolate. Mole is an ancient dish created in a convent more than 300 years ago, when some chocolate accidentally fell into the dough.

Pozole

Pozole is one of the oldest Mexican dishes. It is a stew made from cooked corn served with meat, sliced ​​cabbage, chili pepper, onion, garlic and other herbs and spices. Pozole was the current traditional food of the Incas, Mayans and Aztecs centuries before Spanish domination. It had great sacred and ceremonial significance.

Tamales are a typical dish of some Latin American cultures; they are rolls prepared with a corn-based dough filled with meat, vegetables, fruit or other ingredients. The name tamal comes from the Náhuatl language: tamalli means wrapped.

The dough is wrapped in cob and/or corn leaves, bananas, avocado or maguey (American agave).

The origin probably dates back to a period between 8000 and 5000 BC. Aztecs, Maya, Olmecs and Toltecs used it as an easily transportable food ration for armies, hunters and travellers.

It is certainly the oldest dish in the Mexican culinary tradition. There are also some sweet versions.

In Mexico there are a considerable number of types of tamales. In the Aztec region, tamales are eaten for breakfast or as a snack or during baptisms, weddings or during Christmas holidays.

Mexican Restaurant: Enchiladas

The enchilada (or, usually, enchiladas) is a typical dish of the Mexican culinary tradition. It is made up of a filled tortilla, rolled up on itself and seasoned with chili sauce. Enchiladas are made using corn flour. They are light pastries filled with different ingredients, from meat to vegetables.

It is a popular street food, widespread in all Central American countries.

Nopales

Nopales are cactus leaves eaten raw or grilled.

The leaves are often part of the species known as opuntia ficus-indica.

Nopals are typically sold fresh or bottled. Used to prepare nopalitos, they have a light, sweet taste and are crunchy and mucilaginous.

They are typical of this cuisine and widely used especially for their beneficial properties.

Esquites

Corn kernels cooked on the grill and seasoned with onion, cheese, chilli pepper and mayonnaise.

Gorditas

These are cornmeal loaves stuffed with meat and cheese.There are other variations with different fillings, something for all tastes.
