Passionate about cooking since childhood thanks to the time spent in his grandmother's tavern, Daniele graduated from the Hotel Institute of Salsomaggiore Terme in 1991. At the same time, from the age of 14 for seven consecutive years, he worked on the Romagna Riviera as a chef.
A Castelvetro Piacentino opened a restaurant with his sister Nicoletta, the Osteria del Pescatore, where the pasta is still made by hand and the broth is prepared with three types of meat.

After graduating from the Hotel Institute of Salsomaggiore Terme, Persegani also became teacher. From 2010 to 2015 he was one of the pillars of the channel AliceTv, abandoned in 2016 to participate in La Prova del Cuoco.
In addition to having a restaurant, Persegani is a consultant for a multinational that produces catering machinery.
In 2010 he was nutrition consultant and chef for Casa Azzurri, role which he reconfirmed in 2014 on the occasion of the World Cup.

- Where does your passion for cooking come from?
My passion was born thanks to my grandmother who imprinted on both me and my sister. A passion for food and cooking.
He had such an amazing way with spices that I have tried many of his recipes over the years, but one in particular stands out: "Spice Cake".
A delicious cake made completely of different seasonings like cinnamon or nutmeg mixed together; This recipe always left me wanting to eat more!
It shows me and my sister smiling proudly as we hold what we believe to be our first baked cookie in the kitchen where Grandma taught us how to make it best! As children, whenever anyone came to dinner or family gatherings they were always treated to mouth-watering food prepared by young chefs who knew how to use an essential ingredient like no other: love.
- What was your educational background?
I studied and trained at the hotel institute in Salsomaggiore Terme where I still teach.
- What feeling did you feel being the consultant and chef of the Italian national team during the 2012 World Cup?
To be precise, I worked for 10 years in Casa Azzurri which is the headquarters where sponsors, media and FIGC gravitate. Starting from 2004 in Portugal and ending in 2014 in Brazil. Therefore, I was the chef who took care of the catering of Casa Azzurri and not of the team, who in any case were sometimes guests for lunch or dinner.
- How was it for you to work for the television program “La prova del Cuoco”?And what rewards did it give you?
Before the chef's test I spent almost 6 years alongside Franca Rizzi in Casa Alice. The Prova del cuoco and Antonella welcomed me as if I were already part of that big family, a truly pleasant environment.
- What are your future plans?
For the future, in September I will start a new television experience but at the moment I can't reveal where yet.... a bit of suspense !!!!!
