Las Bravas. Valentina and Mireja have made it their profession and, after traveling far and wide across Spain, they arrive in Italy aboard their blue trailer: they are called Las Bravas and their specialty is tapas.
They arrive in Milan and from there they will leave to make themselves known throughout the country. Theirs is a kitchen on wheels in which they prepare a revisited version of the culinary specialties of the Iberian peninsula.
Mireja is of Spanish origin, Valentina lived in Barcelona long enough to fall in love with it. Their project was born from the love for Spanish culinary culture and the desire to share and export it: hence the idea of re-proposing Iberian recipes in a street food version and starting their traveling business.
Spanish cuisine has a long and rich history. When Columbus landed in North America, he brought with him not only microbes but also food traditions from Spain such as potatoes which would eventually become one of the most popular vegetables grown throughout Canada as well as parts including Arizona France India Ireland New Zealand Russia Utah Virginia USA Venezuela Wales Yugoslavia or even Hawaii!
Spanish people have a way with food. They are known for their flair and creativity when it comes to cuisine, which can be seen as one of Spain's most distinctive contributions to world culture (along with literature). The cuisine of the southern regions uses more spices than other parts of the Iberian Peninsula; this includes things like chilli or garlic – additions that are common throughout the region, but not in all areas of each country itself.
What all these countries share is an emphasis on fresh, seasonal ingredients rather than supplies prepared months in advance so they can last longer during the shelf life due right before winter sets in again.

It's not just tapas, but also complex sauces that can take hours to prepare! For this reason we wanted our Iberian-style recipes: simple and sophisticated at the same time, with an elegance of times gone by that combines gracefully in modern street food for everyone."

The idea of re-presenting Spanish cuisine through the lens of Traditionalist Gastronomy was born when they realized how few places still served home-style dishes - but what if you didn't have access or time? How could these classic flavors ever make it outside of their own community without any help?” So instead of making things difficult for ourselves, we decided to leave Spain.
But what were the steps to set up a tapas bar, or in general a food truck, on two wheels?
A tapas bar, or a truck in general, requires you to have a very good understanding of the basics. You should be able to cook with sauces and spices and know how much heat is safe for food preparation; all the necessary tools are also obviously essential, such as the utensils and equipment used specifically when cooking food at home, such as multipurpose pots/plates etc., then there is advertising - letting people know what your restaurant offers through flyers distributed around the city (or online), social media posts mentioning their business hours so that more followers can find them easily if possible!

A 'tapas bar' on two wheels: How do you start?There are several things you will need and some might seem like common sense, but before we dive into this list of must haves and must not haves; let me ask you a few questions first!
What type of cuisine are we choosing (Spanish/Mediterranean etc.)? Who will serve as chef de partie within my team dynamic - I am waiting to open a business partnership with someone else who already has experience running their own kitchen.

The process is long and always starts from a good idea and a lot of good will to implement it. You need to be very clear about your objectives and the identity of your business, carefully evaluating both the expenses and the possible earnings.
Next, you have to deal with bureaucracy: first of all you need the certificate of the Food and Beverage Administration course. Another fundamental step, the opening of the VAT number at the Revenue Agency, registration with the INPS and the Chamber of Commerce. You must then go to the municipality of residence to obtain the license for itinerant trade, and find out in which streets it is allowed to park and sell and at what times. Each Municipality has its own regulations and knowing the rules well allows you to avoid all sorts of problems and sanctions.

The initial costs are certainly not those of opening a real restaurant and it is easy to amortize them quickly.
You can more easily build customer loyalty: the relationship with those who "eat" is more direct and informal than in traditional catering. Sales are also simplified and fast: the street food format is more practical than the classic "courses", and helps increase profits.
You can move around and participate in festival, events or even choose the best places that offer more sales possibilities: if one place doesn't work, start the engine again and go!
