The roots of typical Piedmontese cuisine date back to peasant tradition.

Piedmontese cuisine is a typical representation of authentic Italian culture. It has roots that go back centuries, when people still lived in poverty, but with an appreciation for what they could afford and enjoy on their tables - a simple but delicious meal that may not be formal or elegant, but will always fill your stomach after one course too many!
Aristocratic families from all over Italy came to visit family members who had settled there long ago during the Napoleonic period; some even remained, ensuring that the Piedmonte cooking style (known today worldwide) took shape.

It is a rich cuisine of dishes with a strong and decisive flavour. But what are the main products served in all the restaurants in Piedmont?

A recent study asked people in the city to name their favorite food. By far the most popular dish was the ravioli with meat sauce! It's clear that this city loves pasta, even if they aren't Italian. Other noteworthy choices are fiordiligas (pasta shells filled with vegetables), vermicelli sautéed in a pan and then eaten cold delicately paired between two coffee timbales immersed in an artichoke cream sauce; sage roast pork slow cooked until tender enough to carve.

The Piedmont is rich in DOP and IGP branded products.

The regional recipes are made unique by some ingredients such as truffles, Barbera or Barolo and cheeses.

The truffle can be of two qualities: the black one, more common, and the white one, more expensive and rare. The area with a high production for the harvest is Alba. Among the most important recipes we find the "Filetto alla Rossini", enriched by the presence of Foie Gras.

The Barolo is used in the preparation of "Brasato", a Fassone meat stew cooked for a long time in wine. All restaurants in Piedmont 

Milk production is very ancient. Dairy art is very widespread in Piedmont. There are more than thirty types of Piedmontese cheeses, including 9 with the DOP mark. One of the most famous cheeses produced in this region is Gorgonzola.

Of fundamental importance, in this area, is chocolate, closely linked to the city of Turin. It is in this city that Bicerin was born, a hot drink based on coffee, cocoa and milk cream.

Mixing cocoa, vanilla, water and sugar gives rise to chocolates. The Gianduiotto was the first chocolate to be wrapped. Born in 1865, when Michele Pochet combined cocoa with hazelnut.

The pride of the region is the pastry shop, from which come the Amaretti, made with almonds, the Marron Glacè, the Baci di Dama and the Bonet, a spoon dessert prepared with amaretti, cocoa, eggs, milk, flavored with rum and covered in caramel.
